This easy gnocchi recipe is one of my family’s favorites. The entire family can enjoy the summer flavors of the Mediterranean all year round with this great recipe.
I love simple 30-minute meals that can be made any night of the week and can be enjoyed by any pasta lover. Potato is a firm favorite in our house and a staple for the whole family.
The store-staple gnocchi can be kept for busy weeknights when time is tight and it can be used in different ways to make a variety of quick and easy meals.

I use them for many easy weeknight dinner ideas using store cupboard staples or fresh ingredients.
The dishes can be veggie-based or they can have a variety of your favorite family protein added.
If this is your first time trying gnocchi then you will find it in the pasta aisle at your grocery store.
If you have a little more time and you are feeling adventurous then you can even try making your own homemade gnocchi.

- Large Cast Iron Skillet

Ingredients Required To Make Mediterranean Gnocchi Skillet Recipe
- Gnocchi
- Red Onion
- Courgette / Small Zucchini
- Cherry Tomatoes
- Fresh Basil
- Parmesan Cheese
- Mozzarella
- Tuna
- Garlic
- Dried Italian Seasonings
- Olive Oil
- Green Olives
- Salt & Pepper

How To Make Mediterranean Gnocchi Skillet Recipe With Tuna
To begin take your cast-iron skillet and pour the oil into the pan and place on medium-high heat.
Next prepare the vegetables by chopping up some red onions, cherry tomatoes, olives and courgette/zucchinis.

Place the onion, and courgette/zucchini into the skillet and fry them until the onion and other vegetables are softened and browned.
Now add the cherry tomatoes, olives, dried herbs to the skillet and the tinned tuna and mix together in the pan.

In a large saucepan add a kettle full of boiling water and place the small dumplings in the water with some salt.

Bring the water and the gnocchi to a boil. The pillowy gnocchi will float to the top of the water once cooked. Once cooked the gnocchi can be removed from the pasta water and added to the skillet. (this will only take a couple of minutes)

Stir the pillowy potato gnocchi into the large skillet so that the ingredients are mixed together. Top with fresh mozzarella and place the skillet into a preheated oven 200C/390F/Gas Mark 6 for 10/15 minutes so that the cheese can melt.
Once the mozzarella has melted, remove the skillet from the oven and serve with fresh herbs and parmesan.
