This has to be The Best Mexican Omelette at least that’s what my son tells me. He loves this flavourful and filling breakfast dish first thing in the morning.
It’s also a great way to use up any of your Mama’s Easy Beef Chilli
We used to have a breakfast treat in South Africa at a pizza restaurant which is where this dish is inspired from. On a weekend as a treat when we were in the shopping mall we would have breakfast.
You could choose from a full English breakfast, a breakfast pizza, or the Mexican pizza with scrambled egg and cheese on top. This is where the inspiration for my own Mexican omlette recipe came from.

- Omelette Pan or Frying Pan
- Small Bowl
- Whisk
- Grater
- Teaspoon
Ingredients Required To Make The Best Mexican Omelette
- Cheese
- Beef Chilli
- Chilli Flakes
- Salt
- Pepper
- Oil
- Herbs
How To Make The Best Mexican Omelette
Begin by adding a small amount of oil to your omelet or frying pan. I use some spray oil currently as it has no sun value on my diet plan.
Next in a small bowl crack your three eggs and whisk them up. Add them to the hot pan so that it covers the bottom of the pan completely.

Season the omelet with salt and pepper. As an optional extra you can add some additional heat with chili flakes to the eggs.

While the eggs are cooked add the beef chili to the top of the omelet. Spread it out evenly and then add the cheese on top of that.

Transfer the omelet to a plate and place it under a grill to melt the cheese whilst also continuing to heat the chili. Once the cheese begins to bubble and brown it is ready.
